Smashed Cauliflower

Ingredients
1 head of cauliflower, florets cut off and reserved.1/2 -1c heavy cream1 tbsp butterFresh nutmeg if you've got it - yumSalt and pepper to taste
Directions
steam cauliflower florets until very soft.
add to blender or food processor (food processor will make a less loose end result), add butter and cream, as needed, blend until smooth (your choice how smooth)
Season as needed, serve.
