Easy Lentil Soup

1 bag lentils6 cups water2 tomatoes, chopped3 carrots, chopped2 celery stalks, chopped1/2 large onion, chopped1 Tbsp. oregano1 Tbsp. fresh chopped basil1 Tbsp. fresh rosemary2 cups spinach2 bay leaves sea salt and pepper to taste
Cook the carrots, celery and onion until soft. Throw in the tomatoes and herbs. Add the water and lentils. Cover and let cook until lentils are done, about 20-25 minutes. Add spinach at the last minute and cook an additional 2-3 minutes. Serve hot.
