Lentil Stew

Ingredients
2 cups dry lentils7 cups of water1 can diced tomatoesmedium onion, choppedgreen bell pepper, chopped1-2 medium carrots, peeled & chopped2 medium potatoes, peeled & quartered4 cloves of garlic, whole & unpeeled2 bay leaves (whole)salt & pepperPaprika (sweet pimento)
Directions
Put water and lentils on medium heat, add can of tomato without draining. Add chopped onions, peppers, carrots, potato and whole garlic cloves. Add bay leaves and salt & pepper to taste.

Once it starts to simmer on medium heat, bring to medium-low heat to keep it simmering slowly. This will keep the lentils from breaking open. Cook for approx. 45 minutes covered. Stir occasionaly.
