Grain-free Pumpkin Bread muffins

Ingredients
5 eggs1 can pumpkin puree (can only be 1 cup)1/4 cup coconut oil (or coconut butter raises the fiber)1/2 coconut flour1tsp baking soda1tsp vanilla1-2 Tbs pumpkin pie spice1/4 cup honeyI added vanilla creme stevia
Directions
1) Preheat oven to 400 degrees
2) Put all ingredients in medium sized
3) Whisk until batter is mixed
4)Spray pans with olive oil and muffin papers
Using 1/4 meaure batter and place into muffin papers
5) Bake for 13-18 minutes

Serving Size: MAKES A DOZEN LARGE OR 24 SMALL MUFFINS
