Southwest Sweet Potato Chili

Ingredients
1 Medium Onion6 Mini Bell Peppers1 Can of Black Beans1 Large Yam, Peeled1 Ear of Yellow Corn2 Cans of Diced TomatoesJalapenoChili Spices (Packet or Your Own)Canola Oil
Directions
In a large pot (I like my Wok), heat the Canola Oil.
Slice the Onions and Bell Peppers and get them into the Oil. Allow them to saut� (about 5 min), then add the Tomatoes, the Beans and the Yams (peels and diced). Add diced Jalapeno. Add Chili Spices and allow to simmer about 25 minutes. Add Corn and allow Chili to rest and cool. Yum!
