Minty New Potato Salad

Ingredients
360g Baby New PotatoesHandful of Fresh Mint2 Spring Onions1 Lemon (zest and juice)3 Tbsp Hellman's Light Mayonnaise Salt and Pepper to taste
Directions
1. Rinse potatoes and if necessary, chop larger potatoes in half. Put in a pan with boiling water, a pinch of salt and a few mint leaves.
2. Finely chop mint leaves and add to a large bowl
3. Roughly chop onion and add to bowl
4. Add mayonnaise and mix
4. Using a grater, zest the lemon before cutting in half and squeezing the juice and mix
5. Once the potatoes are cooked (use a fork to test the softness), drain and set aside to cool.
6. Once cool, add to bowl and mix in
7. Add salt and pepper to taste
