Garden Meatballs

Ingredients
1 clove of garlic, minced2 cups fresh spinach or arugula, coarsely chopped1/2 cup chopped tomatoes1/2 cup grated carrots1/2 c chopped yellow or red onion1/2 c uncooked Bob's Redmill gluten-free oats1 large egg white1 tsp each: thyme, paprika, poultry seasoning, dijon or honey mustard (or dry mustard seasoning)1 TBSP balsamic vinegar1 pound 93% lean ground turkey
Directions
Preheat oven to 350 degrees.

Combine all ingredients vegetables in a bowl and mix well;

Add in balsamic vinegar, egg white, and all seasonings and mix well;

Mix the oats and turkey in last; form mixture into 15 meatballs and put into a baking pan; bake at 350 degrees for 25-30 minutes.

Serving Size: Makes 15 balls, roughly 1-inch in diameter; 3 balls = 1 serving
