Baked Raisin Bread French Toast

2 whole eggs3 tablespoons skim milk1 teaspoon vanilla½ teaspoon ground cinnamon4 slices raisin bread
1. Preheat oven to 400°F. Line a cookie sheet with parchment paper.
2. Combine eggs, milk, vanilla and cinnamon; beat well. Dip each slice of bread into the egg mixture until completely coated.
3. Arrange the dipped bread on the cookie sheet.
4. Bake the French toast for 10 minutes. Turn the bread and bake another 10 minutes.
5. Spread each slice of French toast with 1-tablespoon peanut butter, if desired, (not included in Nutritional Info).
6. Serve with your favorite syrup (not included in Nutritional Info).
