Broccoli Cheese casserole

Ingredients
2 cans soup (cream of whatever you decide)4 c fresh broccoli, steamed to crispy tender2 c assorted cheese, shredded12 slices Gualtney low-fat bacon, cooked and crumbled1 onion, chopped2 c whole grain rice
Directions
In pot, add rice and 3 cups water, and cook for 20 mins, leave lid on. After cooking bacon, drain most of the grease from frying pan and saute onion in remaining grease.
Mix all the ingredients together in a big bowl, minus the Parmesan cheese and sprinkle with salt and transfer to a baking dish. Sprinkle the Parmesan cheese on top. Bake at 350 degrees for about 30 mins, until bubbly.
