Lox and Cream Cheese Stuffed Cucumbers

Ingredients
Cucumber (with peel), 2 cucumber (8-1/4") Cream Cheese, 8 ozSmoked Salmon (lox), 6 oz Shallots, 1 tbsp chopped Lemon Juice, .5 lemon Dill weed, fresh, 3 sprigsSalt, dashPepper, black, dash
Directions
Create stripes in the cucumbers with a peeler - slice into one inch rounds - use a melon baller to scoop out the inside - combine the filling ingredients - transfer to a pastry bag - pipe filling into each cucumber slice
