2 Chicken Leg Quarters, bone in, skin on1 tablespoon unsalted butter, softened1 tablespoon seasoning (I use Penzey's BBQ 3000)salt and pepper to taste
Preheat oven to 450 degrees. Lightly brush a rimmed baking sheet and the chicken pieces with butter. Lay chicken, skin side up, on sheet; season with salt and pepper and any additional spice you'd like to use.
Roast chicken 40 minutes, basting occasionally with pan juices, until an instant-read thermometer inserted into thickest part of the thigh (avoiding bone) registers 165 degrees. Transfer to a platter; loosely tent with foil. Let stand 10 minutes before serving.
