Sweet potato, 1 large Red Potato, 100 grams Garlic, 1 clove Portabella Mushrooms, 200 grams Summer squash, 1 cup slices Basil, 0.5 tbsp Rosemary, dried, 0.5 tsp Oregano, ground, 0.5 tsp Olive Oil, 1.25 tbsp *Lemon Juice, 0.5 fl oz Maple Syrup, 0.3 tbsp
preheat oven to 450C
Cut potatoes into slices or wedges.
Mix oil with maple syrup and spices and lemon juice. Toss cut potato wedges and bake for 35 min. Remove and now add cut mushrooms and squash and roast for 15 min.
