Cream of Celery Soup

Ingredients
1 head of celery (about 3 pounds), chopped1/2 lb carrots (about 5 medium), chopped1 1/2 large onions, chopped6 cloves garlic, minced2 Tbsp. extra virgin olive oil2 tsp. salt1 tsp. black pepper1 cup all purpose flour3 cups almond milk, hot
Directions
1. Heat oil in large stock pot. Add garlic and onion and saute for 2 minutes. Add celery and carrots and saute until crisp tender. Season with salt & pepper.

2.Add broth and bring to a boil. Simmer for 1 hour.

3. Blend vegetables with an emulsion blender until desired smoothness.

4. Whisk together flour and hot milk. Add to soup and heat till thickened.
