Spinach and Rice Casserole

Ingredients
3 10 oz packages of frozen spinach, thawed12 oz shredded cheddar cheese5 large eggs5 Tbs dried parsley3 cups brown rice, cookedWheat germ
Directions
Cook the rice and spinach. Squeeze the water from the spinach. In a large bowl, stir the rice and cheese together. In a separate bowl, beat the eggs and parsley together. Add to the rice and cheese. Add the spinach to the mixture. Mix well. Pour into a 9x13 pan and sprinkle the top with wheat germ. Bake at 350 degrees for 35 minutes.
Delicious with baked beans!
