Ingredients
Leitha's Vegan Kentucky Burgoo1 green or red bell pepper, chopped1 small onion, chopped2 carrots, chopped or petite carrots tossed in2 celery ribs, chopped5 garlic cloves, chopped1 quart Veggie stock or broth2 14.5 ounce cans of crushed tomatoes1 cup of salsa1/2 bag of frozen corn (about a pound)1/2 bag of frozen lima beans (about 14 ounces)1 can garbanzo beans rinsed 1 can kidney beans rinsed1 bunch of collard greensSalt and pepper4-8 tablespoons vegan Worcestershire sauce
Directions
Mix and cook all ingredients for 6-8 hours at low simmer.
