Spicy Butternut Squash Soup

Ingredients
low fat cooking spray1 onion chopped400 grams (14 oz) butternut squash, peeled & chopped2 tsp ground cumin850 ml (1 1/2 pints) vegetable stock (bouillon)salt & pepper to taste
Directions
spray medium saucepan with cooking spray
add onion & saute 3-4 minutes until begins to soften
add butternut squash & cumin, stir well
pout in the stock & simmer for 20 minutes until the squash is tender
remove from heat; blend in a food processor or with hand blender
season to taste
