Potato Skin Mash

4 large (about 750g - 26.5oz) royal blue or Dutch cream potatoes, or other variety of potato suitable to mash, washed 500ml (2 cups) milk (low fat)25g (1Tbs) cold butter, chopped (butter is best but margarine is ok too) pepper, to taste
Peel potatoes and place skins into a small saucepan. Pour in milk and place over very low heat.
Slice potatoes, and place in a saucepan of salted water, and bring to the boil.
Cook potatoes for about 10- 20 minutes or until very tender. Drain well, then return to pan and mash up with a masher.
Gradually add milk through a fine sieve, mashing to desired consistency.
I only used about half the milk - but this will depend on ther type of potato - you need enough to go creamy without going sloppy!!
Add butter, stir to combine, and season to taste.
Serving Size: Serves 6
