B's Samosa Recipe

Ingredients
Firm Tofu (1 block)2 medium potatoes2 cups frozen green peas1 can diced tomatoes with green chiliescurry sauce mixolive oil, 2 tbsp
Directions
Boil potatoes with skin on, let cool. When cool, cut into pieces. Heat olive oil; add potatoes and let them cook for a minute or so. Then add tomatoes, peas and spices and cook for another couple of minutes. Add tofu and let simmer on low heat for 10 or so minutes.
