2-3 large Portabella Mushroom Caps2 c raw Baby Spinach1 c Roasted Red Peppers1/3 c Athenos Crumbled Feta with Tomato and Basil1 tbsp Basil Pesto (according to recipe)
Rinse caps in cool water, lay on paper towel (gill side down) to dry. Spread pesto inside caps, divide spinach between each, layer red peppers and top with Feta. Wrap each cap individually in foil. Place on hot grill (about 500 degrees. Grill 15-20 minutes or until spinach is wiled and cheese melted.
