Fried Ham Potato Cheese Skillet

Ingredients
4 Large Russet Potatoes (peeled and sliced)1 Cup Cut Up Ham1 Cup Mild Cheddar Cheese (shredded)1/2 Onion (diced)1 tsp Coconut OilSeasoning to taste. I used garlic powder, salt, pepper, dried parsley, celery salt.
Directions
Heat coconut oil in large skillet. Add sliced potatoes. Cover and cook on low until almost done (stir occasionally). Add any seasonings. Stir in ham and onion and cook 5-10 minutes longer or until onions and potatioes are cooked. Stir in cheese. Cover and cook until cheese is melted. Remove from heat and serve.
