Vegetarian Rice Stuffed Red Pepper For One

Ingredients
1 Large Red Sweet Pepper1/4 c diced sweet onion1/4 c chopped zuchinni1 med. carrot chopped1/4 c vegetable broth1 c brown rice (cooked)1/4 c tomato paste1/4 c chopped fresh parsley1/4 c chopped fresh dillJuice of one whole lemon1/4 tsp black pepper1/4 tsp Salt Free Greek Seasoniong
Directions
Preheat oven to 350.

Cut top off pepper, scrape out seeds and wash.

Put top back on pepper and place in small oven safe dish. Bake for 30 minutes.

While that bakes, sauté the onions, zuchinni and carrot in vegetable broth for about 6 minutes.

Stir in rice and tomato paste and thoroughly coat.

Stir in lemon juice, parsley, dill, pepper and seasoning.

When pepper is ready, remove the top and stuff with rice mixture and put back in oven and bake 30-40 minutes more until pepper is soft.
