Chicken Piccata

2 Large Lemons4 boneless chicken breastssalt and pepper1/2 cup flour4 Tblsp cannola oil1 small shallot or 1 clove garlic1 cup chicken stock3 Tblsp unsalted butter2 Tblsp fresh parsley
heat oven to 200. Halve one lemon.thinly slice one half.Juice remaining 1/2 and whole lemon
Cut breasts into thin cutlet. dredge in flour salt and pepper. heat 2 Tblsp oil in heavy skillet over med high heat. Cook cutlets 2 min on each side. Set in ovenproof dish. Remove all chicken. add garlic or shallot. Saute for 30 seconds. Add stock, lemon slices. heat and reduce by 1/3 about 4 minutes. Add lemon juice and simmer for 1 minute. Add butter until sauce thickens. Add pareley. Spoon over chicken and serve immediately over pasta.
