Sour Cream Chicken Enchiladas

6 oz cooked chopped chicken breast1 cup (8oz) light sour cream6 medium corn tortillas1/2 cup salsa verde3 oz shredded cheddar cheese
Preheat oven to 350 degrees. Chop or shred 6 oz of cooked chicken breast. In a small mixing bowl, combine 1 cup of light sour cream with 1/2 cup of salsa verde. Stir to combine. Spray the bottom of baking dish with nonstick cooking spray. Place 2 tortillas on the bottom of the dish. Top the tortillas with 1/2 of the chicken. Top chicken with 1/2 of sour cream sauce. Continue layering the tortillas and chicken. Cover the top with the cheese and remaining sour cream sauce. Bake at 350 degrees for 20 minutes or until cheese is melted and sauce is bubbly. Makes 6 servings.
