red lentils soup

Ingredients
2 tbsp olive oil1 cup chopped leeks 1 C chopped onions 1C chopped carrots 1 cube chicken broth 4 cups boiling water .25 cup RED LENTILS.50 BROWN LENTILS 2 tbsp tomato paste salt and pepper to taste .4 tbsp lo-fat yogurtcilantro2 tbsp lime juice (or to taste)
Directions
heat olive oil and add chopped veggies, cook for 5 mns until tender
add tomato paste , chicken bouillon cube, boiling water, red lentils, salt and pepper to taste
Cook for 35mns and liquefy in blender.
In another pot , boil water and brown or green lentils until "al dente". Rinse in cold water and add to previous soup.
Before serving, add yogurt lime juice and cilantro to individual taste.
