Sweet & Spicy Peanut Noodles

Ingredients
1 tsp sesame oil1 Tbsp minced garlic1/2 tsp dried ginger1/4 cup reduced fat peanut butter2 Tbsp low sodium soy sauce1 Tbsp hoison sauce1 Tbsp brown sugar1 Tbsp rice vinegar1 tsp asian chile paste (or to taste)4 oz whole wheat linguine or thin spaghetti1/4 cup scallions, diced
Directions
Cook pasta according to package directions. Drain and set aside.

In a small saucepan, heat oil over medium heat. Add garlic and ginger; cook, stirring, about 1 minute. Add 3 tablespoons of water, peanut butter, soy sauce, hoisin, brown sugar, vinegar and chile paste; cook, stirring often, until sauce is thick, about 4 minutes. Toss in pasta and scallions; serve at room temperature or cold.
