Ingredients
2 extra large eggs1/2 cup 1% cottage cheese1 oz. crumbled feta cheese1/4 cup frozen chopped spinach, defrosted and drainedBeat eggs with cottage cheese until well blended.Spray a muffin tin with nonstick cooking spray. ladle egg mixture into sprayed tin, top with spinach, slightly stir into eggs. Sprinkle tops with feta.
Directions
Bake quiches for 20 mins at 350 degree F, until slightly golden and set. enjoy!
