Potatoes:Sweet potatoes 4 cup/ 2 lbsTrader Joe's Organic Sugar, Evaporated Cane Juice, 24 tsp/ 1/2 cupLand O Lakes 2% Milk, 2 oz Butter, salted or unsalted, 2 tbsp meltedSalt, .5 tsp Vanilla extract, imitation, alcohol, 1 tsp2 large eggsTopping: Whole Wheat Flour, 0.3 cupTrader Joe's Organic Brown Sugar, 1/2 cupSalt, 1 dash or 1/8 tspButter, unsalted, 2 tbsp meltedPecans, .5 cup, chopped
Preheat oven to 350F.
Mash sweet potatoes and mix all ingredients under potatoes. Place in greased 9X13 pan.
Mix all topping ingredients in a separate bowl and and layer on top of potatoes.
Bake for 25 to 30 mins. Broil for 1 minute if you want a crunchier topping.
Serving Size: Makes 8 1/2 - 3/4 cup servings
