Baked Oatmeal (Seymour)

Ingredients
5 cups rolled oats3/4 c. blueberries1/2 c. chopped walnuts2 apples, peeled, cored and finely diced1 T. baking powder1 tsp. ground cinnamon1 tsp. pure vanilla extractdash of salt2.5 c. skim milk4 eggs, beaten1/2 c. honey
Directions
The night before:

In a large bowl, mix all ingredients. Pour into an ungreased 9x13 baking dish. Cover and refrigerate overnight.

The next day:
Remove pan from refrigerator and allow to sit at room temperature for 30 minutes. Preheat oven to 350 degrees. Bake until lightly golden brown, about 30-40 minutes. Do not over bake.



Serving Size: 1/2 cup.
