Ingredients
46 oz low sodium vegetable juice (V8)(2) 10-oz cans diced tomatoes(2) garlic cloves, minced(1) teaspoon chili powder(1) lb lean ground beef, browned, drained.PREPARED AHEAD OF TIME (0vernight soak, rise):(1) 1/2 cup dried pinto beans(1) 1/2 cup dried baby Lima beans(1) 1/2 cup dried small red beans(1) 1/2 cup dried black beansFINAL PREP:Combine all ingredients, simmer chili on stove (or crockpot) until beans are tender, about 2 hours.
Directions
Soak beans overnight in 8 cups of water. Drain off water and rinse beans before combing other ingredients.
