Award Winning Salsa

Ingredients
2 cups diced fresh tomatoes1/2 cup finely chopped onions3 cloves finely chopped garlic1/2 jalapeno pepper1/2 cup cilantro
Directions
Dice tomatoes. 1 large tomato is about 1 cup diced. Finely chop onions and garlic. Slice jalapeno in half. Remove the seeds and discard them. Most of the heat is in the tip of the pepper. If you want it spicier leave intact. Milder remove tip.* Remove stem. Finely chop pepper. Combine all ingredients. Allow flavors to develop for a few minutes before serving

    If you just add a tsp of cumin and a squeeze of one lime with a dash of salt, you have a recipe that was given to me 20 years ago from a Spanish friend. I like to add chopped mango to it and then spoon it over my grilled chicken or fish. - 3/12/08
