Chicken Broccoli Casserole with Brown Rice

Ingredients
12 oz roasted chicken, diced or shredded1 cup brown rice1 tsp olive oil2 tsp garlic3 cups broccoli1/2 cup diced tomato12 oz chicken broth1/4 cup sour cream1 cup shredded cheddar cheese
Directions
1. Cook the brown rice according to package directions. If you undercook it just a bit, the result will be better.
2. Preheat oven to 350.
3. A few minutes before the rice is done, sauté garlic in a large ovenproof skillet.
4. Stir in the chicken broth and sour cream.
5. Add the broccoli, chicken, tomato, and rice, and bring to bubbling.
6. Stir in half the cheddar cheese. Salt and pepper to taste. Top with the remaining cheddar.
7. Bake for 20 minutes until cheese is melted and broccoli is tender.
