Vegetarian Sloppy Joes

Ingredients
1 c. TVP 1 c. vegetable broth1 TBLS EVOO1 yellow onion minced2 garlic cloves minced1 red bell pepper diced1 green bell pepper diced1 15 oz can tomato puree2-4 TBLS brown sugar (unpacked and to taste)1 TBLS soy sauce2 TBLS balsamic vinegarsalt and pepperEnglish muffins (NOT counted in calories and nutrition information)
Directions
Bring vegetable broth to a boil, add TVP, remove from heat and cover.

Heat skillet over medium heat. Add EVOO, onion, garlic and bell peppers. Saute for 10 minutes until softened and caramelized.

Place TVP, caramelized vegetables and remaining ingredients (except English Muffins) to crockpot. Cook on low 4-6 hours. Serve on English muffins with a side of fruit for a light summer supper.
