Zuchinni Lasagna

Ingredients
16 oz Ground Turkey1/2 cup onion4 garlic cloves2 cups Spaghetti sauce4 zuchinni15 oz of Part Skim Ricotta8 oz Low fat/Fat free mozarella1/4 c grated parmesean1 eggsalt pepper2 tsp italian seasoning
Directions
Saute onions, garlic, and ground turkey until cooked, salt and pepper to taste; add spaghetti sauce and italian seasoning and simmer for 15 min.

Cut zuchinni in thin long slices (they are your noodles) Use a mandolin if you have one.

Mix Ricotta cheese, parmesean and egg together.

Layer ingredients with sauce on bottom, then zuchinni, then cheese mixture, more sauce and mozarella and repeat layers ending with mozarella cheese on top.

Bake at 350 for 45 minutes covered with foil; take foil off for last 10 minutes.
