Homemade tomato soup

Ingredients
2 tbsp Nutiva cold pressed extra virgin coconut oil 4 large carrots chopped1 large onion sliced1 tbsp dry basil (or 3 tbsp fresh)1 quart chicken stock (or vegetable stock) (homemade to reduce sodium intake)Salt & pepper to tasteOptional (not calculated in this recipe)1 pint heavy cream- add until desired consistency achievedOrCoconut cream for vegan or lactose free
Directions
Sauté carrots & onion till soft, add basil
Sauté 5 more mins
Add tomato & broth, bring to boil
Reduce heat and simmer 30-45 mins
Cool slightly & purée
Strain for smoother texture
Add cream if desired
