Chicken Maple Dijon

2 Boneless, skinless chicken breast1 tbsp olive oil2.5 tbsp dijon mustard1/4 Lite maple syrup1 c. uncooked brown rice (makes approx. 4 c. cooked)1/4 cup 1% milkwater as needed
Put 1 cup rice, .5 tbsp olive oil in pan and heat on high, swirling rice around to coat with oil. When rice begins to sizzle, add 2 cups of water and cover. Bring to a boil, reduce heat to medium low. Cook until what is absorbed into rice.
Brown chicken breast in .5 tbsp of olive oil. Cut into bite size pieces. Add in mustard and syrup with .5 or so of water. Season with salt, pepper and garlic powder to taste. May need to add additional mustard or syrup to find the right balance of salty sweet goodness.
Add in rice and milk. Stir until combined. Add water if need to help mixing. Should form a slight gravy.
Serve with a side of broccoli.
