French Onion Soup

Ingredients
yellow onions, 6 medium, thinly slicedlow sodium beef broth, 8 cupssugar, 1/4 tspextra virgin olive oil, 3 tbsgarlic, 2 cloves mincedItalian seasoning, 1/4 tspbay leaf, 1 salt and pepper
Directions
Saute onions in olive oil on medium high heat until well browned but now burned, about 30-40 minutes. Add the sugar 10 minutes into the process to help with caramelizing. Add garlic and saute for 1 minute. Add the beef broth, bay leaf and Italian seasoning. Cover paritally and simmer for 30 minutes. Season to taste with salt and pepper.

Serve in individual bowls. Toast baguette slices broiled with a slice of Swiss cheese to accompany if desired.
