Apple Cinnamon Quinoa Bites

Ingredients
1 c cooked Quinoa1 c quick oats1/2 tsp cinnamon1/2 tsp nutmeg3 tbls brown sugar1 tbls sugar1 tbls maple syrup1 c chopped apple2 eggs, lightly beaten
Directions
1. Preheat oven to 350
2. In large bowl mix quinoa and oats
3. In small bowl mix cinnamon, nutmeg and sugars and then add spice mixture to quinoa and oats
4. Add maple syrup, apples and eggs and mix until just combined
5. Spray mini muffin pan, including top of pan to account for overflow
6. Fill each muffing slot with 1 tbls of mixture and bake for about 15-20 minutes

Serving Size: 1 bite, recipe makes 24 bites

    Just finished making these and I really like them. I ate one for dessert tonight. I used quick steel cut oats and added them dry (not precooked). I may add a little bit of walnuts next time. Yummy! I will make this again. - 3/14/14
