Chicken Fried Rice

Ingredients
3 chicken breasts, cubed4 cups instant brown rice2 cups chicken broth1.5 cups frozen peas and carrots1 tbsp vegetable oilSoy Sauce to taste
Directions
Combine chicken broth and rice. Bring to a boil, then turn heat to medium-low and cook rice for 10 minutes or until tender.

Fry chicken in a skillet and chop into cubes. Add vegetable oil to skillet and fry peas and carrots for a short time. Add rice and toss with soy sauce to taste.
