Oat muffins with dates and wheat germ

Ingredients
1 c oats(1 tsp vinegar)1 c skim milk2 large eggs, lightly beaten1 c Flour, white 1/3 c Brown Sugar, packed 1 1/2 tsp Baking Powder1/2 tsp Baking Soda1/8 c (2 Tbsp.) Wheat germ12 dates, chopped
Directions
Put 1 tsp vinegar into measuring cup then add skim milk to 1 c, OR use 1 c buttermilk. Add this to the oats to soak for 5 minutes in a large mixing bowl.

Stir dry ingredients together.
Add eggs to oat mixture, then stir in dry ingredients and dates, just till moist.

Spoon into 12 lined muffin tins and bake for 18-20 minutes at 400 degrees, until toothpick comes clean from the centre.
