eggs, avocado scrambled

Ingredients
1 tsp bacon grease1 tsp diced onion1 egg1egg whitesriracha thai chili paste (to taste)salt (to taste)1 - 1.5 tbsp shredded cheddar cheese (0.5 oz)avocado, diced (about 1/10 of a fruit)
Directions
heat bacon grease in pan over med to med hi heat.

while grease is heating, beat egg, egg white, chili paste and salt together.

add onion to hot pan. cook until beginning to carmelize. add egg mixture. sprinkle cheese over top. stir to cook. will cook quickly.

when done, remove from heat and stir in diced avocado. serve immediately.
