Pastelon (Paleo)

Ingredients
6 thickly sliced Plantains (lengthwise)1 lb. Ground beef (you can use turkey meat for a healthier alternative).1 cup of Sofrito (you can find this in the international isle)8 oz No sodium Tomato Sauce2 TSP Ground Cumin1 TSP Ground Turmeric1 Cup Sliced Spanish Green olives2 Cans Drained French Style Green Beans2 Cups shredded Monterey Cheese *Optional
Directions
PreHeat oven to 350
* Slice plantains lengthwise.
* Line a baking sheet with some olive oil or some form of non stick agent. Place Plantains in sheet and brown Plantains in oven. Be sure to flip plantains constantly to keep from sticking to bottom of dish.

*Brown Ground beef with sofrito. Once meat is cooked mix in Cumin, Tumeric, green olives and remove from heat.

*In a 9x13 baking dish put a medium layer meat spread,Browned plantains, drained green beans, then cheese(optional) . Continue layering until meat mixture is gone or plantains are gone. Usually 2-3 layers for me.

*bake in oven for about an hour
