Ground Chicken Stir Fry

Ingredients
1 LB Ground Chicken1 Red Pepper1 Green Pepper1 Medium Onion3 Cloves of Garlic.5 cup of Sun Dried Tomatoes (not in oil)2 oz Walnuts2 TBS Olive Oil
Directions
Chop Onions, Red and Green Peppers and saute in olive oil until onions are clear. Add the garlic and saute for 1 minute. Add ground chicken and cook until all pink is gone. Add walnuts and sun dried tomatoes and cook for 2 minutes.

    I added broccoli and mushrooms. Substituted slivered almonds for walnuts because that is what I had on hand. Used smokey dried tomatoes. Served over brown rice. I thought it was really tasty. My husband thought it could use something more -- maybe soy sauce? - 4/29/11

    Just OK. I added fresh ground ginger and soy sauce and a bit of sherry. Seasonings are similar to a recipe I've made before. The sun dried tomatoes didn't do much for it. I had it over .5 cup brown rice. - 1/18/11
