Vegetarian chicken stew (no meat)

Ingredients
This calls for chicken - skip it3tbs butter, salted or unsalted1 entire leak1 celery stalk chopped fine1 onion medium chopped fine2 tbs parsley chopped fine3/4 cup chicken broth2 egg yolkssalt & pepper to your taste
Directions
butter the bottom of casserole dish. layer all vegetables in the dish and poor broth, cover & simmer one hour. Beat yolks lightly and add to broth & vegetables stirring constantly until it thickens.
