Ammer333 PB2 Splenda Peanut Butter Cookies

1 cup PB21/2 cup lite margarine, softened 1/4 cup splenda sugar for baking1/8 cup splenda sugar for baking1/4 cup splenda brown sugar 1/4 cup Egg Beaters3 tablespoons milk 1 teaspoon vanilla extract 1 1/4 cups all-purpose flour 3/4 teaspoon baking powder 1/4 teaspoon salt
Preheat oven to 375 degrees F (190 degrees C).
In a large bowl, cream together the PB2, butter, 1/4 cup of splenda (leave the other 1/8 for later) and splenda brown sugar until well blended. Beat in the egg beaters, milk, and vanilla one at a time. Combine the flour, baking powder, and salt; stir into creamed mixture. Roll tablespoonfuls of dough into balls. Roll cookies in splenda and place cookies 2 inches apart onto ungreased cookie sheets. Press each ball once with fork tines.
Bake for 8 to 10 minutes in the preheated oven, or until edges are lightly browned.
*Instead of marking with the fork, you can let the balls bake and then when you take the cookies out, press a hershey kiss, or chocolate star in the middle... but dont forget those added calories!

Pretty good but could be more peanut buttery. Next time I'll flip the PB2/flour ratio & see how that does. I used "I can't believe it's not butter light" tub margarine and regular 0cal splenda to cut it even more - Batch was 38 pts+ for WW folks, so depending on how big you make your cookies.. - 2/1/11
