Peanut Chicken and vegetables

Ingredients
1 chicken breast, bone and skin removed2 cups of cooked broccoli1/2 cup of red bell pepper sliced1/2 cup of julienned carrots1/2 a onion diced3 cloves of garlic crushed1 tsp of sugar3 Tbsp of natural peanut butter1/2 cup of water1 tsp of ground or powdered ginger2 Tbsp of sesame oil2 tsp of hot pepper sauce1 Tbsp of oyster sauce1 Tbsp of soy sauce
Directions
Cube the chicken breast. Saute with the onion and garlic in a nonstick pan over medium-high heat until the chicken is cooked through. Add the broccoli, red pepper and carrots and stir fry quickly. Add litle water if needed. Mix the rest of the ingredients together in a separate bowl and pour over the chicken and vegetables. Quickly combine and turn off the heat. Allow to cool 10 minutes. The sauce will thicken. Serve with brown or white rice or cooked whole wheat spaghetti.

    WOW! ZOWIE! Oh Mama- This recipe IS A KEEPER. I served this over Curried Couscous. It was both pretty & delious. My husband RAVED. One little change: I would heat the sauce in a microwave just enough to get the peanut butter to mix. It melted in the frying pan, but it didn't spread to every bite-YUM - 3/21/08
