Thai Chili Sauce

Ingredients
1 plum tomato, chopped½ small red pepper, chopped2 green onions, chopped3 cloves garlic, chopped3 tbsp minced ginger¼ cup vegetable broth¼ cup fish sauce3 tbsp lime juice2 tbsp coconut (or dark brown) sugar2 tbsp rice vinegar3 red Thai chilies, chopped1 cup minced cilantro
Directions
Place all the ingredients into a food processor and puree smooth.
Pour into a pot and bring to a boil.
Reduce heat to medium and cook, stirring occasionally, for 25 minutes (until reduced to 2 cups).
Can in a waterbath for 15 minutes.
