1/2 cup pumpkin puree1/2 cup oatmeal (quick is good, chop a little using regular)Pumpkin pie spiceCinnamon1 tsp sweetener (optional)
1. Preheat oven to 350 degrees. Grease a cookie sheet.
2. In a small bowl, combine pumpkin and oatmeal. Shake pumpkin pie spice and cinnamon as desired, and add sweetener. Mix well.
3. Using a spoon, drop into eight cookies onto the cookie sheet. Bake for 15 minutes or until done.
Serving Size: Makes eight cookies. YES you can eat ALL EIGHT cookies!
