Carolyn's Paleo Bolognese Sauce

1 Lb ground grass-fed beef2 tbsp olive oil1 large onion, chopped and diced;4 cloves garlic, minced;3 carrots, diced;2 celery sticks, diced;2 tsp dried oregano;2 can tomato paste; plus 1-2 cans of water for each can of paste1/4 C Red Wine1/2 C Beef Broth1/4 Coconut Milk1 bay leaf;1 28 oz. can tomatoes;Crushed1 14.5 oz. can diced tomatoesOptional salt and pepper to taste;Fresh parsley for garnishing.
Saute Onion, Celery, Carrot & Garlic in olive oil for a few minutes. Add Beef and brown. Add all tomatoes & tomato paste and cook about 10 minutes. Add Beef Broth, Wine & cook 5 minutes. Add coconut milk and seasonings simmer 30 minutes & serve.
