Healthy Pancakes "Maryvero"

Ingredients
*Whole Wheat Flour, 1 cup.*Instant, Quick, and Regular Oats Cereal, 1 cup, dry, yields.*Buttermilk, lowfat, 1.5 cup.*Baking Powder, 1.5 tsp.*Splenda Sugar Blend for Baking, 4 tsp.*Salt, .5 tsp.*Egg, fresh, 1 medium.*Bob's Red Mill Whole Ground Flaxseed Meal, 1 Tbsp. *Wheat germ, crude, 50 grams. *1 tsp powder cinnamon
Directions
1.- Mix the egg, instant oatmeal and 1 cup of buttermilk in a bowl. Put mixture to one side to allow the oatmeal to soften.
2.- Preheat pan to a medium heat.
3.- In a big bowl, blend the rest of the ingredients, immidiately adding together the mixture from the first bowl. Add the remaining 1/2 cup of buttermilk to create a soft batter (if still too dry, add buttermilk as necessary).
4.- Spray no-stick cooking spray (pam) evenly into hot pan and pour 1/4 cup of batter mix, spreading it to the size of a C.D. .Flip pancake after 1 or 2 minutes to cook both sides. Serve hot.
*Batter makes about 6 to 7 pancakes.

    I did not have all ingredients so substituted: maple syrup for Splenda, 1/4 c flax meal for flax meal + wheat germ, buckwheat flour for whole wheat, and 1/4 c egg substitute for egg. They have a slight whole meal nuttiness and twang but nice hearty texture without being rough. Will make often. - 4/15/07
