Applesause oatmeal muffins

1 cup Old fashioned oatmeal1 cup whole wheat flour1 cup skim milk1/2 cup unsweetened applesauce2 Egg whites1 tsp baking soda1/2 tsp baking powder1/2 tsp salt1 tsp cinnamon1 tsp sugarRaisins or nuts optional
1. Soak oatmeal in milk for 1 hour (also soak raisins if using).
2. Preheat oven to 400 deg
3. Add egg whites and applesauce to oatmeal mixture
4. Combine all dry ingredients (except for cinnamon and sugar)
5. Add wet ingredients to dry ingredients, don't over mix. (I add some extra cinnamon to the batter at this point)
6. Spoon batter into a greased muffin pan, sprinkle with cinnamon and sugar mixture, and bake for 20 to 25 minutes.
Serving Size: Makes 12 Muffins
